What is the difference between instant and active dry yeast?
Active dry yeast must be proofed (dissolved in warm water first) before adding to dough. Instant yeast (also called rapid-rise) can be added directly to dry ingredients. Both leaven bread equally well, but instant yeast is more convenient.
Can I use fresh yeast if a recipe calls for instant?
Yes. Use 2.86× the amount by weight (e.g. 7g instant → 20g fresh). Fresh yeast is more perishable but gives a slightly richer flavour favoured by professional bakers.
How do I proof active dry yeast?
Dissolve in lukewarm water (38–43°C) with a pinch of sugar. Wait 5–10 minutes. If it foams and bubbles, the yeast is alive. If nothing happens, the yeast may be dead — do not proceed with the recipe.
Does yeast available in India work the same as imported yeast?
Yes. Common Indian brands (Gloripan, Angel, Pansari) contain the same Saccharomyces cerevisiae strain. Performance is equivalent when stored correctly in a cool, dry place.
How long does dry yeast last once opened?
Once opened, store dry yeast in an airtight container in the refrigerator. It stays active for 3–4 months. For best results, check the expiry date on the packet and proof before use if you are unsure of freshness.
